Driven by the same passion for wine, we created our own production in 2014 under the brand Saint Olive Frères®.
Made and bottled at our partner producers' estates, our Côtes-du-Rhône, Crozes Hermitage and Côtes-de-Provence wines are distributed mainly to individuals, restaurateurs and wine merchants in Lyon and its region.
Based on this experience and our encounters, we wanted to develop, in Lyon, the concept of wine production in the city centre with an urban winery.
First of all, what is a Chai?
The term Chai refers to the place where all the stages of winemaking take place .
Wineries are generally located within vineyards, far from city centers. In recent years, urban wineries have emerged in cities such as New York, London, and Paris, and are enjoying considerable success.
It was from this observation that we developed the idea of creating Lyon's first urban winery. with the desire to introduce city dwellers to wine production methods.
The Chai team
Grégoire , Co-founder and co-manager of Chai
Grégoire is the one who initiated the urban winery - Chai Saint Olive, who builds strong links with our partner winemakers, the restaurants and wine merchants with whom we work, and who, together with Marie, ensures the smooth running of the winemaking process.
He likes good wine, gastronomy and being in the countryside (or with a glass of wine, sometimes both).
He speaks at 40,000 words per minute in English.
His professional motto: " He who starts well, progresses well ."
Franck , Co-founder and co-manager of Chai
Franck is the one who masterfully orchestrates life at Chai Saint Olive, the one who establishes a privileged relationship with our clients and accompanies them from A to Z during their events held at Chai.
He likes trail running and climbing stairs, Olympique Lyonnais, drinks with friends and speaks Wall Street English.
His professional credo: " No progress without perseverance ."
Anne-France, Cheffe de Projets Evénementiels
Anne-France, c'est celle qui accompagne Franck dans l'organisation d'événements avec énergie et précision : prospection, devis, logistique et accompagnement le jour J. Anne-France est ultra polyvalente : elle anime les ateliers "Visite et Dégustation de vin" et "Assemblez votre cuvée" autant qu'elle prête main forte à Marie et Grégoire pour les mises en bouteille ou sur le dégorgement du Trabulle, le Pét' Nat' du Chai.
Elle aime la muscu, le bon vin et danser au Chai.
Son crédo pro : "Qui a dit que c'était impossible ?!".
Marie, Maîtresse de Chai
Marie, c'est celle qui veille au bon déroulement des vinifications jour après jour : fermentation, élevage, mises en bouteille et étiquetage des vins. Marie forge des relations saines avec nos vignerons partenaires et travaille en étroite collaboration avec Franck, Grégoire et Anne-France.
Elle aime l’équitation, partager de bons moments autour de plats gourmands et bonnes bouteilles, et parle couramment le vin, avec passion, à quiconque voudra bien l’écouter.
Son crédo pro : "Laisser ma passion me mener à ma profession".
