Chai Saint Olive’s first label draws directly on Lyon’s identity. Born and raised in Lyon, Franck and Grégoire wanted a visual identity that celebrated the city—its districts, vineyard plots, and waterways. The design combines understated elegance with iconic elements: the vineyard plots (representing the origin of the grapes), Lyon’s 9 districts, and the city’s two major waterways, the Saône and the Rhône.
The first urban cuvées, launched in 2021, have particularly meaningful names: Cuvée 480 (the first release, in April 2021) and Cuvée 812 (September 2021). These names refer to the respective lengths of the Saône and Rhône rivers and also tie in with the winery’s technical choices in terms of winemaking and aging.

What do the names 480 & 812 mean?
Cuvée 480: Linked to the Saône, this wine is vinified and aged in stainless steel tanks for around 6 months, resulting in a fresher, more direct style.
Cuvée 812: Named after the Rhône, this wine undergoes a longer aging period in oak barrels—around 10 months—to develop greater structure and roundness.
These references appear on the labels and are often highlighted with spot varnish that emphasizes the outlines of the river and its tributary.
Design, color coding, and materials
Chai Saint Olive has adopted a clear visual identity, using different colors to distinguish its single-varietal wines:
- Olive green: Chardonnay
- Dark green: Viognier
- Terracotta: Gamay
- Brown: Syrah
