Terracotta Amphora: The Renaissance of Urban Winemaking at Chai Saint Olive

What if the future of wine was rooted in the oldest of traditions? That's the bet we're making at Chai Saint Olive, by integrating into our urban winery a terracotta amphora straight from Torrevieja, in the province of Alicante in Spain.

Visible at the entrance to our winery, its ovoid shape intrigues, fascinates, and raises questions. This amphora enriches our winemaking triptych: after the stainless steel tank and the oak barrel, it opens a third path. More than just a container, it symbolizes a less interventionist and more intuitive approach to winemaking.

The amphora: a balance between tradition and innovation

Since antiquity, the amphora has been central to winemaking. Handcrafted from terracotta, it offers unique properties:

  • Natural porosity : it allows for slow micro-oxygenation of the wine, without any woody influence.
  • Aromatic neutrality : it respects the identity of the grape, without transforming it.
  • Thermal inertia : it maintains a stable temperature, essential for the balance of the wine.

Far removed from modern technology, the amphora operates with restraint. It allows the wine to breathe and express itself with purity.


The ovoid shape: a natural movement, a constant dynamic

What distinguishes the amphora from any other container is its shape. The absence of angles promotes a fluid and perpetual movement of the wine, similar to natural lees stirring. This gentle agitation brings roundness, homogeneity, and complexity to the wine . Aromas meld, tannins soften, and the wine gains a silky texture. Without artifice, the amphora reveals the essence of the wine in all its truth.

A 100% amphora-aged vintage: the birth of an additional signature.

This choice of 100% amphorae is consistent with our approach to Vin de France in Lyon: working closely with the grapes, emphasizing purity, balance, and creativity. Each sip is an invitation to rediscover the raw material, softened by the ancient influence of the amphora.
